It's super easy to make.
Prepare 20 minutes
Cook 1 hour
1 stick + 3 tblsps Unsalted Butter , softened
1 1/2 Cup Dark Brown soft Sugar
1/4 Cup Smooth Honey Roasted Peanut Butter
2 Large Eggs , beaten
3 Large Banana's, mashed
2 Cups Self Rising Flour
1 tsp Baking Powder
2 Tblsp. unsalted butter, softened
1 cup Confectioners Sugar
1/4 Cup Peanut Butter
2 oz Cream Cheese
large roasted and salted peanuts, roughly chopped for the topping if you would like ...we didn't do this on our cake
Grease and line a 2 lb Loaf pan if you don't have a silicone one
Cream the BUTTER and SUGAR with electric beaters or as I did in the cake mixer
until light and fluffy
Beat in the PEANUT BUTTER
Add EGGS and BANANA'S
Fold in the S.R. FLOUR and BAKING POWDER with a pinch of SALT
Put in prepared pan ..I just pushed it in to the corners and flattened the top of the mixture in the pan with a knife
BAKE for 50-60 minutes until risen, golden and a skewer or knife put into the centre comes out clean
COOL in the pan completely
For the FROSTING
Beat the BUTTER until creamy, then beat in the SUGAR a large spoon at a time until crumbly.
Beat in the PEANUT BUTTER, then the CREAM CHEESE & a pinch of SALT
It will make a super smooth, spreadable icing ..(do not over beat)
Frost the cake and sprinkle on the ROASTED PEANUTS if using
Super easy to make
