I got this recipe and the photo's from ' The WHOot '
2 tubs or 1 tub of ready made chocolate frosting ( or make your own)
1/2 cup white choc bits
2 x 10 oz (280g) packets of Malt Balls
1 lb 2 oz (500g) packet ready made white fondant icing (Wilton's make it get it at Michaels or Walmart in the cake aisle)
green food colouring
a few Glacé Cherries to decorate
1 Packet Rich Chocolate Cake Mix
Prepare Cake as directed
- 1 tubs or one large
Tub Ready Made Chocolate Frosting
- 1/2 cup
White Chocolate Bits
- 2 x 10 oz
2 Packets Malt Balls
- 1 lb 2 oz
Packet Ready Made white fondant icing
- Green Food Coloring
- Glacé Cherries and sprig of real holly to decorate
Preheat the oven to 350 ºf (180°C) (160°C fan forced).
Grease a 6-cup capacity bowl-shaped cake pan or pudding basin with cooking spray. Make cake according to packet directions. Pour batter into cake pan and bake for 1 hr to 1 hr 10 min or until cooked when tested with a skewer. Turn out onto a wire rack to cool completely.
Using a serrated knife, trim the cake so you have an even base then slice the cake twice horizontally to give three equal layers. Spread 1/3 cup frosting over the top of the base layer and sprinkle with half the choc bits.
Place the middle layer on top and repeat process with 1/4 cup icing and remaining choc bits.
Place onto a serving plate and spread top and sides generously with remaining icing. Cover the entire cake with Malt Balls, starting at the bottom and working your way upwards. Cover and chill for 1hr or until the frosting has set.
Meanwhile, knead the icing (fondant) until smooth. ( Or make your own frosting and pour over as seen in the photo's above)
If using the fondant (as in the photo below) set aside two-thirds of the icing and tint the remaining portion green. Roll out and cut out some holly-shaped leaves, making indents for veins with a knife.
Place the white icing onto surface dusted with icing sugar and roll out to an irregular shape, about 5mm thick. Transfer to the top of the cake, so it looks like dripping cream over the top. Decorate with holly leaves and Jaffas for berries
