Let's take a walk in the woods

We saw so many flowering plants and waterfalls on our recent celebration vacation for our 30th Wedding Anniversary;
Here is yours truly holding a branch of Blackberry blossoms ...it was breathtaking and all in the wild

​Now let's walk outside the door, turn right and in just 3 minutes we will be on our walk through the woods that leads us all the way to the Canyon

One of my favorite recipes for a delicious treat ..Hello Dolly Bars ..Bake now ...Freeze for the Holidays.

One of my favorite recipes for the Holidays

BAKE NOW 
FREEZE FOR THE HOLIDAYS !!

They are
so easy to make and they look like a Million Dollars and taste even better.
Make them to your own taste ...if you don't like nuts leave them out ...change the chocolate chip flavors ...it's a very versatile recipe ..

This is how I like to  make them.

Hello Dolly Bars 

INGREDIENTS

1 1/2  cups of crushed graham crackers (about 8 crackers)
2   cups of chocolate chips  (use only 1 1/2 cups if using Butterscotch chips as well) 
1   cup butterscotch morsels/chips
1 1/2  cups of shredded coconut
1 1/2  cups of chopped pecans or a nut of your choice
1 14oz can of sweetened condensed milk 
1/2  cup of butter

METHOD

Preheat the oven to 350f degree or 180c degrees 

Melt the butter in a saucepan
Pour melted butter into an 11" x 7" or 8" x 8" cake pan ..I used the later 
Sprinkle graham cracker crumbs in to pan and mix well with melted butter to form a crust
Press it down
Layer on top of the graham cracker crust the Chocolate Chips ..then the Coconut and finally the pecan nuts
Evenly pour sweetened condensed milk over everything
Bake in the oven for 25 to 30 minutes
The top should be slightly brown

Let cool in pan for at least half an hour, cut into bars and serve
Or once cool open freeze in the freezer, once frozen ..either wrap individually
When thawing remove the wrapping whilst the bar is totally frozen
Or you can just place the in a lock 'n' lock container or airtight container 
If you have to layer them put parchment paper in-between layers.

I sometimes like to print out the recipes and put them at the end of the table for my guests to take home and try for themselves.

I bought more Christmas decorations yesterday 

I will photograph them and post about them another day 

The shops were filled ..it was quite crazy ..long lines at the registers 

Just like Christmas eve .

Wreaths ,Friends, Crafting,Pottery & My Recipe for Quiche Lorraine ...what a week !!

I have had a great week I hope that you have too ...it firstly started with a dental appointment for my 6 monthly clean, check up etc ..nothing wrong...great gums ...see you next March !! 
Tuesday cleaning and chatting for hours with my oldest son on FaceTime 
Wednesday ..Pottery classes of course 
Thursday dear friends came around to make Autumn wreaths for our front doors ...
I made Quiche Lorraine and Danny who was taking some days off of work made some lovely Peanut Cookie Brownies ..yum 
Friday Danny is home with me and we do the weekly grocery shop and go for a meal out...
So a great week ...and I have Danny home till Tuesday ...what's not to love.
As you can see the girls made their wreaths and I made mine in my crafting room ..once upon at time my Son's bedroom

We had lots of flowers etc to choose from ..funny items hanging from the door frame and the ceiling are my gym equipment that I use everyday for therapy to my damaged arm ..they do look strange on this photo ..ha! ha!

 QUICHE LORRAINE ....MINE & DANNY'S FAVORITE QUICHE ..SUPER EASY TO MAKE 
  • 1 1 (9 inch) unbaked pie crust
  • 11/4 cups of diced ham (cut in to chunky chunks or buy the already diced or cubed one)
  • 1/2 cup chopped leeks (white and pale green parts only)
  • 1/2 cup chopped onion
  • salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper (optional)
  •  
  • 4 eggs
  • 2 egg yolks
  • 1 cup heavy cream 
  • 3/4 cup milk
  • 1 teaspoon chopped fresh thyme (optional)
  • 8 ounces Cabot Seriously sharp or Kerry Gold Aged Cheddar shredded  cheese
  •  Preheat oven to 425 degrees F (220 degrees C).
  • Roll pie dough to fit a 9 inch pie plate. Place bottom crust in pie plate and chill for at least 20 minutes before baking. Line the chilled pie crust with foil and fill halfway up with dried beans, rice, or baking weights. Bake in the preheated oven for 7 minutes. Remove foil and weights and bake until golden brown, about 5 minutes.
  • Reduce oven to 325 degrees F (165 degrees C).
  • Heat just a sprinkling of olive oil and add leeks, onion, salt, black pepper, and cayenne pepper. Cook and stir until tender and browned, 5 to 7 minutes. Set aside.
  • Whisk eggs, egg yolks, cream, and milk together in a large bowl. Add thyme and stir to combine.
  • Sprinkle 1/3 onion-leek mixture on the bottom of the baked crust. Top with 1/3 cooked ham and 1/3 Aged cheese. Ladle in half the egg mixture. Sprinkle with 1/3 the onion-leek mixture, 1/3 ham, and 1/3 cheese. Pour in remaining egg mixture and top with remaining onion-leek mixture, ham, and cheese.
  • Bake filled quiche in the preheated oven until browned and set, but no longer jiggly in the center, 40 to 45 minutes may take a little longer but take out only when the jiggly in the center has gone away .
  • Allow to cool slightly before serving.

I came home from Pottery on Wednesday with a finished bowl that I have made for my Autumn coffee table decor ..I am over the moon with it ...do you like it ??
The colors came out just as I had envisaged ...so happy 
The Mural on the wall I painted for my son 19 years ago ...it is of a piece of land that belongs to the people of Guernsey and is called L'Ancresse Common ...the martello towers are all around the coasts and bays (The British built 15 Guernsey loophole towers (Martello towers) at various points along the coast of Guernsey between August 1778 and March 1779 to deter possible French attacks after France had declared itself an ally of the American rebels in the American Revolutionary wars.) as you can see I painted a huge on ..there also is a nearly full size Guernsey cow that I painted on the same wall along with little rabbits etc...that live on the Common.
The hand made quilt I am sitting on belonged to Danny's Great Grandmother who was a full Cherokee Indian.

I put acorns and leaves on the outside and inside ...I glazed on 'oatmeal' on the inside of the bowl then glazed the color 'Seaweed' on top of it ...The leaves were glazed just 'seaweed' with an 'iron lustre' around the edge ...acorn was glazed 'birch'

An upside down bowl shows you the outside of the bowl ..I first glazed it oatmeal then Smokey Merlot so you can see how some of the oatmeal poked through so nicely

I made two more leaf bowls ...this time I made loop holes for my thumb to go through should I choose to use them as candle holders ..I made the finger hole to look like the stem of the leaf and added some acorns and leaves to these .

Today I tried to chat to my Sister who unfortunately has severe Alzheimer's ..on FaceTime and Bella the cat was not having any of it as you can see...she insisted on laying on my iPad ..I shooed her away several times but she kept coming back ...Toby was more laid back and just sat on me !!
