Sweet Potato Yeast Bread Recipe with Cream Cheese Nut Spread ...the most delicious bread ..easy to make ...have a go ..Freezes well too !!

2 packages active dry yeast
1 3/4 cups warm water
1 cup mashed sweet potatoes (without added milk or butter) I cook mine in the Microwave for about 4 minutes 
1/2 cup butter, softened
1/2 cup honey
1 egg
2 teaspoons salt
3 cups whole wheat flour
3 1/4 – 3 1/2 cups all-purpose flour (Plain)

Sometimes I make this recipe in to two loaves or I make one big rustic one like the one below ..either will work with this recipe

In a large mixing bowl, dissolve yeast in warm water.  Add sweet potatoes, 1/2 cup butter, honey, egg, salt and whole wheat flour.  Beat until smooth.  Stir in enough all-purpose flour to form a soft dough about 3 1/4 cups but add more if necessary

Turn onto a floured surface; knead until smooth and elastic, about 6 – 8 minutes.  Place in a greased bowl, turning once to grease top.  Cover with cling wrap and let rise in a warm area until doubled will take about an hour 

Punch dough down.  Turn onto a lightly floured surface; divide in half.  Shape into either two loaves.  Place in two greased loaf pans or for a more rustic look like I have done in the photo I just make one huge circular loaf without using a pan  Cover; let rise until doubled, about 25 minutes.  Bake at 375 for 40-45 minutes or until golden brown (cover loosely with foil if top browns too quickly).  Remove from pans to wire racks. 

Melt 1 tablespoon of butter; brush over warm bread. This is very important to make the crust taste extra yummy....Cool.

CREAM CHEESE NUT SPREAD  (can be made without nuts if you prefer)


1 cup butter, softened or low fat spread
1 8 oz. package cream cheese, softened or low fat cream cheese 
1/3 cup finely chopped walnuts, toasted

In a small mixing bowl, beat butter and cream cheese until fluffy.  Stir in walnuts.  Serve with bread. 
If you don't like nuts then just leave them out

It will soon become your favorite recipe 

You will make it over and over again 

You can also make it in to little Dinner bread rolls

Pop them in to a zip lock freezer bag (open freeze first) and just take one out for breakfast , lunch or dinner 

If you choose to make the loaves, I like to slice them and wrap in cling wrap and freeze so that I always serve up fresh bread
