Morning ..this is a quick recipe for a delicious very healthy meal for the busy work week ahead

ROASTED VEGETABLES 

First choose the veggies you want to eat 

I like the selection above 

But whatever you would like will be great 

I always use fresh veggies for this dish 
One of the great things I do to be prepared for 
healthy meals through out the week 

When I have bought home the vegetables from the grocery store ...I prepare them all ready for the week or do it on a Sunday

I clean the broccoli and cut it in to florets then put it in a zip lock bag or any bag that has a great seal 

Now they are ready to just pop in the microwave or whatever you want to do with them 

I peel and chop the carrots and put them in bags 

The onions can be chopped up and put in a container or bag and can be added to any meal through out the week .

Chop up the yellow squash and clean the Brussel sprouts ..

Clean and chop up the Sweet Potato

Don't do this with white or red potatoes as they will go brown and spoil 

Clean and deseed your peppers 

You can also chop up bacon and put that in a bag just ready to add to whatever you are cooking that evening

Gather all of your pre-chopped up veggies (including the sweet potatoes) and scatter them in to a suitable pan ..I like to line mine with foil then spray with Non-stick olive oil spray ...

Then just coat with a small amount of Olive oil ...(any cooking oil would do but I always cook with Olive oil ..it's better for you )

I love to then sprinkle Italian Salad Dressing & recipe mix....I sprinkle about a 1/3 rd of the packet on the amount of veggies I have in this pan ...just put on whatever you require 

I then salt my veggies ..but just a small sprinkle as there is salt in the Italian seasoning 

I then love to add some freshly ground pepper corns ...I use the multi colored ones 

Get your clean hands in to the veggies and just mix them all up so that they are all coated with the oil and seasonings 

Pop in to a 400 f degree (200 c) (gas mark 6)  for 45 to 60 minutes ...

Till they look as gorgeous as this ...so delicious ..they have a wonderful flavor

Add your favourite meat ...this was a ready rolled chicken breast roast that I just had to put in the oven along with the veggies for the same amount of time ...no preparation so just perfect for the busy work week ...a super healthy meal too

So once you have all of your weeks veggies chopped 

It basically is dump the veggies in the lined pan

Sprinkle with olive oil and seasonings 

Grab the chicken ...just chicken breasts would be great 

Put in the oven 

Get out and eat 

Easy clean up too 

You could even use a foil dish and just toss it in the trash 

It's a lovely home cooked meal 

With no fuss
