Janet's ...30 Minute meal for the busy Working Week ..Chicken, Shrimp and Vegetable Pasta with a Side of Strawberry Field's Salad !!

Here is a quick and easy ....Very healthy meal for you to make tonight ...great work week meal only 30 minutes to make

Quick Strawberry Field's Side Salad

I like to cook only with Olive Oil and use plenty of wine to keep the calories down

Freshly cut Broccoli and French Beans...I like to use fresh ones but frozen or even canned will be just fine ..and quicker too

Sliced mushrooms and Sunburst yellow cherry tomatoes....I eat these like candy keeping a bowl of them out on the counter ..they really do burst sweet goodness when you bite them ..yummy

Peeled frozen shrimp ....ready to add at the end of cooking time as they only need to change color and they are ready ...you don't want them to be chewy by cooking for too long

Freshly shave shards of Parmesan Cheese ..I do this with a potato peeler ..it takes all but a minute

Freshly cooked Angel Hair Pasta ..to use as a base for the dish ...you could use any pasta you have in your cupboard

My trusty old Cast Iron skillet is used to gently cook the chicken in a dash of wine at a medium low heat  (you could brown them first in olive oil if you wish).  just cook and turn over for a few minutes till chicken is sealed

Add the broccoli and a little more wine if it need's it ..Season how you like. I use salt and freshly ground pepper corns ..
Again I like to use fresh broccoli but frozen is good too ...I prepare,clean and chop all of my fresh veg at the weekend when I have been grocery shopping and put it in zip lock plastic bags ..squeezing the air out ...then you just have to open the bag when you need it ...you can do this with most vegetables

Add the sliced mushrooms,french beans, garden peas,and cherry tomatoes' ..more wine if needed 
stirring and coating it all as it cooks ..

Add the Mozzarella cheese if you wish ..I am watching how much cheese I eat so I only added a few tiny pinches of it ..but would be great with a larger amount

Once the chicken is cooked remove it from the pan as you want juicy chicken not dry chicken ..you add it back at the end of the cooking

Put a lid on and turn down the temperature ...let the vegetable steam in the wine till tender ..then remove lid and return the chicken to the pan and now it's time to add the shrimp ...
Cook till the shrimp is pink on both sides and no longer opaque.

Place the cooked Angel Hair Pasta on a pretty plate or it could be put in to the skillet and mixed in to the chicken, shrimp dish 

Top with your chicken,shrimp and vegetable's dish and spoon over some of the juices from the pan 

Finally add the shards of Parmesan Cheese

I LOVE to eat as many vegetables as I can so we had ours with a Strawberry Field's Side Salad 

Lettuce leaves of your choice ...sliced sweet strawberries, pine nuts, sunflower seeds, pumpkin seeds, cranberries' and raisins 

Then sprinkle over the best Balsamic Vinegar you can find and let it work it's magic on the strawberries
