I cut mine up in slices so that I can just grab a slice when having a cup of tea or coffee..
Diabetic friendly recipe if you change the ingredients to the ones I have in brackets.
1/3 cup of BUTTER
1 1/3rd cup of SUGAR or (Powdered sweetener such as Splenda or Agava if you want to cut down on your sugar.
1 cup canned PUMPKIN
1/3 cup WATER
1 large ORANGE
2 cups ALL PURPOSE FLOUR
1 tsp. BAKING SODA
1/2 tsp. BAKING POWDER
3/4 tsp. SALT
1/2 tsp. CINNAMON
1/2 tsp. CLOVES (Optional)
1/2 cup CHOPPED WALNUTS
1/2 cup RAISINS OR DATES OR a mixture of both
1 cup of CHOCOLATE CHIPS ( you can buy SUGAR FREE ones at most stores)
Grease one 9" x 9" loaf pan
Cream butter and sugar together well , add eggs, beat lightly.
Add pumpkin and water ...stir
Cut and remove seeds from orange, put in a blender or grinder and grind complete orange including peel ...stir in to batter
In a separate bowl, combine flour, baking powder, salt,cinnamon,cloves,nuts,raisins/dates, chocolate chips, mixing well ...Stir into batter...Spoon in to prepared loaf pan.
Bake at 350f / 177c for about 1 hour or until a toothpick comes out clean.
Let it stand for 10 minutes, remove from pan, cool and wrap
