I am so busy at this time of the year ....I am showing you some of the ways I decorated for Christmas over the years ....
I hope they will give some kind of inspiration .

Picture
Large family get togethers for Christmas ...I so enjoyed them ...alas no longer ...it's now too much for me to do ....but we have lovely memories and I still decorate for just Danny and I.
Picture
We have always had a fresh Christmas tree until last year when we bought this snowy artificial one
I do love it and it's prelit so much less work for Danny to.
I can't wait to decorate it next Saturday
I am slowly going  to decorate our home for Christmas a little at a time each day this week.

This year I am going to use 2 napkin's for each plate ...and I also made some napkin rings out of white fur ..as we are going to have a white fur table runner and a snowy forest scene for our table this year.

Thanks for popping by

When I am sure that you are very busy just like me.

I have most of the Christmas gifts bought and wrapped

After decorating our home inside we will put up some simple decorations for the front porch.

I am making 3 wreaths for the door and both windows

And I need to make a lovely woodland wreath to go on the table on the back deck.

I love making wreaths

I will then have time to shop for the Christmas food ..make some lovely meals to put in the freezer so that I don't have to cook too much through out the week between Christmas and New Year ..which Danny will have off from work.

Happy days getting ready for Christmas or whatever you celebrate at this time of year

Kindest Regards

Janet

My Mother's Christmas Pudding Recipe ...You make it a year ahead of time ...a wonderful thing to make in the New Year months ..

Picture
Happy New Year Everyone
Now is a great time to be thinking of the coming Christmas and as my Mother used to do every January she would make 4 Christmas Puddings ...and let them mature throughout the year ...they were just the most wonderful puddings you will ever eat

Picture
Our dear Mother died in 2001 and I am left with lots of her handwritten recipes that she made time and time again.
I thought I would share this one with you.
Picture
As most of you will know I am British and live in Alabama, USA ...but of course I grew up on the British island of Guernsey .
So this recipe is totally British
You may have to make a few adjustments to suit an American recipe
One of the fruits we call 'Sultanas' ...they are called 'Golden Raisins' in America
'Currants' are dried 'Black Currants' ..I believe that Publix and Whole Foods stock them
They are also available on Amazon.com

Picture
An English pound weight is different to an American one as well as the liquid measurements so just look it up on google and there will charts for you to change it to American.
The 'Stout' my Mum would have used was 'Guinness' but a 'Newcastle' one will be fine.
Picture
Picture
Mum would use these old fashioned pottery pudding bowls and would place a circle of 'grease proof' paper on the top of the pudding ...but you can use 'waxed' or 'Parchment'
Wrap the bowl and pudding in muslin cloth ...or some time of cloth that breaths and tie tightly with twine.
Place pudding in a pressure cooker with the water half way up the outside of the bowl.
Here is a link to show you how to get the pudding ready for steaming using foil instead of Muslin.

Please let us know in the 'comments' if you make them and how you liked the recipe.

If you have any questions again ask them in the 'comments' and I will try to answer them if I can

Happy Baking

Happy Days

Mascarpone Cannoli Cheesecake ....easy to make ...tastes delicious ..this recipe is a keeper

Picture
I made this for Thanksgiving but it would be just perfect for Christmas, New Year, Easter, Birthdays any occasion.
It was so silky smooth and creamy, yummy with a lovely taste of chocolate in every bite.
Just a total treat ....
This recipe is very easy to make.

Picture
Not too many ingredients.
Picture
I crumbed the Biscotti cookies in my food processor (without the butter)two days before I was going to use them ..I stored them in a Zip lock bag.
I used a Chocolate Caramel Biscotti ...
You can use whatever flavor you like including using just your favorite cookie

Picture
I used 'sugar free' chocolate chips ...just to cut down the sugar
Picture
Ingredients
  • 8 large dry biscotti, or your favorite hard cookie
  • 4 tablespoons unsalted butter, melted
  • 1/4 teaspoon kosher salt
  • Two 8-ounce packages cream cheese, at room temperature
  • One 8-ounce container mascarpone cheese, at room temperature
  • 3/4 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon grated lemon zest (from 1 lemon)
  • 3 eggs, at room temperature
  • 3/4 cup semisweet mini chocolate chips
  • Italian cherries in syrup, such as Amarena, for serving, optional
Picture
DirectionsSpecial equipment: a 9-inch springform pan
Preheat the oven to 350 degrees F.
Pulse the biscotti to fine crumbs in a food processor. Drizzle in the butter pulse until the mixture has the texture of wet sand. Press into the bottom of a 9-inch springform pan.
I greased the pan with soft butter and cut out a circle to fit the bottom of the pan from Parchment Paper.

Bake for 8 minutes, until the crust smells toasted and is beginning to brown. Set aside to cool while you make the filling. Reduce the oven temperature to 325 degrees F.
In a stand mixer fitted with the paddle attachment, beat the cream cheese, mascarpone and sugar on medium-high speed until light and fluffy, about 3 minutes, scraping down the sides of the bowl occasionally with a rubber spatula. Add the salt, vanilla and lemon zest; beat on medium speed until combined. Add the eggs, one at a time, beating after each addition until just combined. Scrape down the sides of the bowl and mix again. Remove the bowl from the mixer and fold in the chocolate chips.
Pour the cream cheese mixture over the crust and spread evenly. Bake for 45 minutes, or until the center of the cake still moves just slightly.
Allow the cheesecake to cool on a wire rack for 1 hour. Cover with plastic wrap and refrigerate for at least 4 hours or overnight. Run a knife around the edge of the pan before releasing the collar.
Top each slice of cheesecake with a spoonful of cherries, if using.

I didn't use cherries ...I just used whipped cream on mine

I hope you find time to make this delicious dessert for yourself and your loved ones

Happy Cooking
